The Cherries Jubilee recipe is credited to Auguste Escoffier.. Escoffier cooked the dish for one of Queen Victoria's Jubilee celebrations since he knew Queen Victoria's fondness for cherries. However, his original recipe didn't include ice cream. Instead, the chef poached the cherries in a simple syrup and poured warm brandy over them. Then poured the alcohol aflame right before serving.
